How to Make Vegetable Broth

Looking for ways to use up your garden surplus? Then, try your hand at making vegetable broth. You can cook up a big pot in an hour's time; then, freeze it and use it as the base for your fall and winter soups.

Tip: Celery leaves, broccoli stalks, green bean ends, potato peels and onion peels can all be saved and used to make broth.

just remember when you are cooking, garbage in=garbage out. Don’t make vegetable broth from your compost heap or it will taste like compost heap.

I find that onions leave the most distinctive taste if you’re trying to prepare a broth such as this.

But usually I don’t just use the left overs or trash parts I use mostly whole ingredients to give it a much fuller taste.
