Make the Most of Farmer's Markets
Summer must be coming to a close because I'm starting to see lots of fall fruits and vegetables at the farmer's market apples, pumpkins, okra, peppers, and pears and that could only mean one thing: It's time to get busy canning!
Last week I made two batches of pear freezer jam. This week I plan to work on some apple butter and pickles. Why not hit your local farmer's market, and see what you can find to put up for winter?

Great idea, I’ve been wanting to do apple butter, but haven’t gotten around to it. I’ve never done pickles.

This last week I’ve been in a harvest frenzy…it seems everything decided to ripen at the same time. I’m a recent city transplant to the country, so this has been a bit of a shock. I feel overwhelmed learning so many new skills. Thankfully, my 90 year old neighbor has taken pity on me and is supervising the canning. I figure if she’s made it this long eating her own canned produce, she must know how to prevent botulism:)
do you know if i can swap splenda for the sugar in the preserve recipes or will it hinder the set up process? my dad would be over the moon if he got pear preserves for christmas but splenda would be a better choice since he is diabetic. thank you.
I have an uncle who tried Splenda like that once. The preserves didn’t set as hard as he wanted them to. I remember receiving a couple of jars and they were a bit runny. Imagine a very thick applesauce, very little drip.
Not that I’m complaining, it was very tasty.
I think you might have better luck with another sweetener? I think SweetnLow might work.
Martha Stewart’s website also has a really great recipe for apple butter. When my daughters kindergarten class has Johnny Appleseed day. I made it. It was a huge hit at school and at our house.
