Holiday Ingredient Substitutions

Holiday recipes call for a lot of ingredients that aren't generally used in everyday cooking, like buttermilk and sweetened condensed milk; and while these ingredients may make the dish, they don't exactly help you make your monthly food budget.

So, what's the solution? Spend a few minutes in the kitchen whipping up substitutions for those seldom-used ingredients, and cross them off of your shopping list. Because really, what are you going to do with a half gallon of buttermilk after the holidays are over?

Here are some substitutions to try:

Also keep in mind that you can cut calories easily this way as well. One cup oil can be reduced to one-half cup oil + one-half cup applesauce. Applesauce will give a richer texture due to the fiber content as opposed to bazillions of calories.

Cooking time will vary; you’ll need to add a few minutes (use the clean knife test). Do *not* put up the temperature; it’ll scorch. Be patient and let it get itself done, and enjoy the smell.
