No, we do not ever tire of Thanksgiving leftovers. I cooked a 24-pound turkey for my family on Thanksgiving, but they were rude and did not call to say they were not showing up. It turns out that Thanksgiving is a great time to break away from family and go on vacation since parents are off of work and kids are off of school, that is, as long as you do not care about who you step on along the way. So, anyways, I ended up with a large turkey for a family of 3. We have made turkey sandwiches, turkey soup (yum!) and what I like to call Turkey Delite:
1 portion leftover white turkey meat
1 equal portion leftover dark turkey meat
1 turkey neck and gizzards (if you are old school, like we are)
1 box instant mashed potatoes (prepared)
1 bag sharp shredded cheese
Finely chop the turkey, combining all portions, and mix with the prepared mashed potatoes. Combine with half of the shredded cheese in a baking dish. Set aside remaining cheese to sprinkle on top, along with some panko bread crumbs.
Bake until crispy on top and drizzle wamrmed left over gravy on top. Canned green beans make a fine, inexpensive side dish.
