Banana Bran Muffins

Banana bran muffins pack a lot of nutritional punch for very little money. They're high in fiber and potassium, low in fat; and pretty, darn tasty too.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 cup bran cereal flakes
  • 1 cup all-purpose flour
  • 1 large, ripe banana, mashed (about 2/3 cup)
  • 1/2 cup honey
  • 1/4 cup milk
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. yogurt (plain or vanilla)
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 3/4 tsp. cinnamon

Preparation:

1. Preheat oven to 375 degrees.

2. Combine the bran flakes and milk in a bowl, and set aside.

3. In a second bowl, combine all of the remaining ingredients.

4. Add the bran flakes and milk to the mixture.

5. Stir one to two minutes, or until well mixed.

6. Spoon the batter into a greased muffin tin, filling each cup 2/3 full.

7. Bake 20 minutes, or until tops are springy to the touch.

Yield: 12 muffins

They didn't rise as high as I'd expected, but that doesn't bother me at all, as they're still nicely chewy but not too heavy. If anything, I'll crush the bran flakes a little next time...maybe cook a little longer at 325 instead of 375? That's just nitpicking though...I'm happily munching through these, and well-pleased with them! The cinnamon brings out a really pleasant note, and I used local raw thistle honey...quite a treat!
