Here's a Depression-era recipe for cruellers, submitted by Carol McKellar:

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

Ingredients:

  • 3 cups flour
  • 1 cup sugar
  • 1 cup hot mashed potatoes
  • 1/2 cup milk
  • 3 egg yolks
  • 1 Tbsp butter
  • 1 Tbsp baking powder
  • 1 tsp. vanilla
  • 1 tsp. salt

Preparation:

1. Add sugar, egg yolks and butter to hot potatoes; beat until light and smooth. Then, add the rest of the ingredients. It should be as soft as can be handled.

2. Cut into strips, and twist for crullers.

3. Fry in deep fat. Drain on brown paper.

Carol says: This recipe is in my Grandmother's recipe book, and was made by her sister-in-law, Livone Hardin. Grandma lived through the Depression, and died at 92 in 1976.
