Dandelions are considered a nuisance by many, but to those in the know, they're a welcome source of free food. They're loaded in vitamins and anti-oxidants, and can be eaten from blossom to root. Now that's hard to beat!

Roasted Dandelion Root Coffee

It may sound crazy, but you really can make coffee from dandelion roots. Give it a try, and if you like it, you can make enough to last all year.

A Word of Warning:

You should only harvest dandelions from areas where you are certain fertilizers are not used.
