Frugal Frittata

Turn your leftovers into a hearty egg dish.
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
  • 6 large eggs (omit up to three yolks for low cholesterol version)
  • 1/2 cup cheese
  • 1/8 tsp. salt
  • Leftover odds and ends (veggies, ham, beans, etc.)
  • 1/4 tsp. Italian seasoning
Preparation:

1. Preheat broiler.

2. Combine eggs, cheese, and salt in a bowl.

3. Spray 9” skillet with cooking spray, and warm over medium heat. Add leftovers and cook until heated through.

4. Reduce to medium heat, and add egg mixture. Cook until almost set (approx. 3mins.).

5. Sprinkle with seasoning, and place in broiler until fully set (approx. 3mins).

6. Cut into wedges, and serve.

Yield: 4 servings
