Ground Ginger Substitute

If you don't have ground ginger on hand, use one of these substitutes instead:

One Tablespoon of fresh ginger for every 1/4 tsp of ground ginger

or

An equal amount of allspice, cardamom, cinnamon, mace or nutmeg (this may change the flavor of the dish slightly, but will work just fine in a pinch)
