According to current USDA guidelines, all high-acid foods can be water-bath canned. These include:

  • Fruits
  • Pickles
  • Sauerkrauts
  • Jams, jellies, marmalades and fruit butters
  • Tomatoes (with the addition of lemon juice or citric acid)
