Aspirin/Salicyclic Canning

Definition: An old-fashioned method of canning in which aspirin (which contains salicyclic acid) was added to foods in lieu of heat processing or as a means of acidify low-acid foods, so that they could be water-bath canned. Both practices have been deemed dangerous, and the USDA advises against any use of aspirin in canning.
